I am  convinced some cheaters think they will never get caught.

They are just that arrogant.

To be fair, some have a pretty “good” game of covering their tracks. Some cheaters are so disordered that they are capable of covering their tracks for months and sometimes years!

When they DO get caught, they are shocked.

This reveals just how little they respect the faithful spouse. They underestimate us. That was their big mistake.

They behaved as if they could partake of the forbidden fruit without consequence. This is not how such things work, though.

We will all be held accountable for our actions whether in this life of the next (see 2 Cor 5:10).

There are no morally free lunches. This the cheater will learn either shockingly in this life or in the next.
